The other day I fancied having a sweet snack handy that was rich and filling, but easy to eat and satisfying! Enter… brownie bombs! I adapted the recipe from the base of my low carb pecan pie brownies, but making them no-bake and adding some bonus chocolate chips! 

This recipe just makes six bombs, but of course it would be super easy to double or triple the quantities!

How to Make Low Carb Brownie Bombs

In a bowl, mix together softened butter, fine almond flour, unsweetened cocoa powder, and powdered sweetener until smooth. For the sweetener I used Lakanto, and you can get 20% off everything in the Lakanto store when you use coupon code “SAFTC”.

Stir in some low carb chocolate baking chips. I use the Milk Chocolate chips from Lily's, but you could use any variety that you like – try white chocolate, salted caramel, mint, or dark chocolate for a different flavor profile!

Place in the fridge for 30 minutes to chill, then use your hands to roll the mixture into a ball.

Repeat with the rest of the mixture.

  2. Stir in the chocolate baking chips.
  3. Place the mixture in the fridge for 30 minutes to chill, then use your hands to roll the mixture into six balls.
  4. Store in the fridge until required.
