One of the popular things for low carbers to make in the Instant Pot is egg bites – especially since Starbucks has been making them and people want to recreate them at home. Ages ago I rushed out and bought a silicone mold – this one from Popfex is available in four different colors: green, blue, orange, and purple. I didn't actually make egg bites with it, I used to to make Instant Pot Poached Eggs!
So I thought it was definitely time to use it again, and what could be better than these tasty little breakfast bites that everyone in the family will enjoy! They have one egg divided between the seven bites (an annoying number, but there you go!) so they really don't taste very eggy. They're warm and fluffy, and the pop of chocolate is wonderful!
How to Make Low Carb Chocolate Chip Pancake Bites
Make the batter by combining cream cheese, an egg, almond flour, sweetener (Lakanto is my preferred choice these days, and you can get 20% off anything in their store if you use coupon code SAFTC!), baking powder and vanilla extract together in a small food processor or blender. I use the attachment on my stick blender!
Generously spray the silicone mold with non-stick spray, and divide the batter between the seven holes. Add some low carb chocolate chips – I used Know Better Chocolate Chips, which you can buy from Netrition. They're sweetened with allulose, and they're zero carb! But you could also use the dark chocolate mini chips from Lily’s!
Prepare the Instant Pot by adding a cup of water to the base, then inserting the trivet. Carefully place the mold onto the trivet.
Close the lid and turn the vent to the Sealed position. Cook on high pressure for 5 minutes, then let the steam naturally release.
Using the trivet, remove the mold. Put an inverted plate over the mold and then flip everything over so that the pancake bites fall onto the plate. Serve warm.
These were such a big hit with my family! I even got a “they're actually quite good” from my 8 year old!

- ¼ cup almond flour
- 1 egg
- ½ tsp baking powder
- ½ tsp vanilla extract
- 2 tbs low carb chocolate chips
Instructions

If I don’t have a mold, what can I use?

To be honest I don’t have this particular mold or an Instant Pot – I put the mixture into greased ramekins in the microwave! Of course it makes larger ‘pancakes’ but I didn’t mind that! Delicious.

I haven’t tried this recipe, but in response to your question, do you have any of those really little mason jars? The ones that are about 2″ high and maybe 2.5-3″ across. Maybe those would work and if you are food prepping, they would already be in their own container to store for later.
