These eggplant fritters are crispy on the outside and soft and juicy in the center. I like making these with thick slices of eggplant, but you could cut each slice in half into semi-circles, or cut thinner slices if you prefer.

How to Make Low Carb and Keto Eggplant Fritters

In a bowl, mix together almond flour, flaxseed meal, onion powder, salt and pepper, then set aside. Slice the eggplant into 6-8 slices. Crack an egg into a bowl and lightly beat.

Dip each slice fully into the egg, then into the almond mixture. Fry the slices in a large skillet (you will probably have to make them in a couple of batches). They will need about 3-5 minutes on each side, depending on thickness.Low Carb Eggplant Fritters - gluten free and keto side dish recipe

You could also place them on a wire rack over a baking sheet and roast them (375F for 15 minutes should be enough).

  • ½ cup almond flour
  • ¼ cup flaxseed meal
  • 1 tsp onion powder
  • salt and pepper
  • 1 medium eggplant, cut into 8 slices
  • 1 egg, lightly beaten

Instructions
