If you’re looking for a filling and healthy lunch dish – try this! With just a few ingredients and a few minutes, you can create a meal that will fill you up and get you through the afternoon without snacking.
As you may know I’m rather a novice with the whole avocado/guacamole deal. It’s a texture thing, and I have real issues handling it myself (see my Thai Avocado Soup!). So here I’ve used a store-bought guacamole and pepped it up to make it taste fresher.
Add the guacamole, chopped red onion, and fresh cilantro to a bowl and stir well. Add a splash of lime juice to give it some zing, plus salt and pepper if necessary. When you have the balance right, add in some chopped cooked chicken and stir to combine.
Wash and dry some lettuce leaves (I use Bibb lettuce) and place on a serving plate. Sprinkle the bowl of chicken mixture with extra chopped cilantro leaves and serve. Invite your guests to make their own lettuce wraps!Chicken Guacamole Lettuce Wraps - low carb, healthy, and delicious! Click To Tweet
