Hot summer? You need a refreshing cocktail! This sugar free and low carb watermelon-based drink can be made alcoholic or non-alcoholic, whichever you prefer.
Blend until smooth, then strain the mixture through a sieve into a jug to remove the pulp. I’m afraid you’ll have to do this stage otherwise the cocktail will have an odd texture.
Divide the mixture between two glasses, add some ice cubes and top up with club soda or seltzer water.
