If you're a "bone-nibbler" like me, I'm sure you love lamb chops. Super tender and flavorful meat - and quick to cook, too!

With this recipe I've paired it with a quick honey and balsamic vinaigrette. And yes - I did say honey! For my low carb honey mustard sauce recipe I tried two honey alternatives. For this dressing I used a product from Nature's Hollow which you can buy from Amazon. It's sweetened with xylitol and is 1g net carb per tablespoon. It tastes great and is a little thinner than regular honey, so ideal for making a dressing!
And you may or may not know that balsamic vinegar is the only vinegar that contains carbohydrates. So I don't cook with it often, and when I do, I only use a small amount.
Update! Check out my new recipe for zero carb balsamic vinegar! It's perfect for this recipe!
Oh and this balsamic dressing is great on salads, too! Store-bought versions usually contain between 3 and 6g net carbs per serving of two tablespoons. My version is 2g net carbs for two tablespoons!
How to Make Lamb Chops with Low Carb Balsamic Dressing
Preheat a grill if cooking outside, or a grill pan if cooking inside. Season the chops with salt and pepper, then cook until done to your liking. As a guide, rare is 120°F, medium rare is 125°F, medium is 130°F, and well done is 145°F and higher. A probe thermometer is useful for cooking these chops!
Meanwhile, whisk together olive oil, balsamic, sugar free honey and garlic paste together in a small bowl.
Serve the chops and drizzle the sauce over the meat.
The fruity sweetness of the dressing works SO well with the lamb! As you can see I served it over a mixed salad and it made a wonderful meal for two people to share!
