So recently I showed you all how I roasted a whole duck! One thing to come from the experience (other than some wonderful duck meat!), was a lot of duck fat!

Of course, if you don't have the opportunity or inclination to roast a whole duck, you can actually BUY duck fat. I haven't tried it, but I bet it's amazing!

Duck fat is traditionally used to cook potatoes, so I decided to try it with cauliflowers. It was FANTASTIC! I'll be honest and admit that it doesn't look beautiful (maybe I should have sprinkled a few chopped fresh herbs afterwards, but what can I say – it's December in the midwest LOL). But the flavors are great – I just know that you're going to love it.

How to Make Duck Fat Roasted Cauliflower

You'll need a head of cauliflower, then cut it into florets that are roughly the same size – this helps with even cooking but it's hard to be exact.

Place the cauliflower in a baking dish, then add some melted duck fat, garlic powder, salt and pepper. Turn to coat the cauliflower in the seasonings. Roast for 15 minutes in a preheated oven, then stir again. Roast for another 10-15 minutes until the cauliflower is tender.

This recipe makes a wonderful side dish to pretty much any meat or fish!

Ingredients

  • 1 head cauliflower, chopped into florets
  • 2 tbs duck fat, melted
  • ¼ tsp garlic powder
  • salt and pepper

Instructions

  1. Preheat the oven to 400F.
  2. Place the cauliflower florets in a baking dish and add the duck fat, garlic, and seasoning. Turn to coat well.
  3. Roast for 15 minutes, then stir. Roast for another 10-15 minutes until the cauliflower is tender.
