I'm a huge fan of Palmini noodles! They're made from hearts of palm and you can read more about them in my introduction to palmini noodles or check out my delicious recipe for Four Cheese “Spaghetti” with Palmini.
The four cheese recipe was all about pairing the Palmini with a creamy cheesy sauce. With this recipe, I've paired with a much lighter spicy garlic butter sauce. With a bit of grated Parmesan thrown in too, of course! The result is a fantastic combination of flavors that's a real pick-me-up of a dish!

How to Make Low Carb Spicy Palmini
I'm super loving these Palmini pouches! The whole pack contains 4g net carbs, so although they *suggest* that it contains two servings, maybe that's just for a side dish. Shown here is the whole packet and it was PERFECT for a super quick vegetarian lunch!
Rinse the Palmini in water. If you don't like the flavor, the packet suggests that you soak them in milk first but I've never found that to be necessary.
Meanwhile, melt some butter in a large skillet and add some olive oil and garlic paste (or minced garlic). Cook for a minute or two then add hot sauce to taste. Although you might not think that hot sauce goes with butter and garlic – it works fantastically. Sort of like an Italian buffalo sauce!
Add the drained Palmini and stir well. Finally, add some grated Parmesan and black pepper.
Transfer to a serving plate, and add red pepper flakes and chopped fresh parsley.
The sauce coats the noodles really well, and I just know that I'll be making this dish over and over again. The texture of the Palmini is seriously good. The whole dish took less than 5 minutes to make!

- 12 oz pouch Palmini Linguine, rinsed and drained
- 2 tbs butter
- 1 tbs olive oil
- 1 tsp garlic paste or minced garlic
- 2 tsp hot sauce, or to taste
- ¼ cup grated Parmesan
- black pepper
- red pepper flakes and parsley, to garnish
Instructions
