Here's a seriously delicious and adorable cocktail for you to try! The name of course refers to the cottontail rabbit – a group of twenty or so species that have a characteristic white tail that show when they retreat. Also made famous by the Peter Rabbit books!

Like many cocktails, this comes together in just a few seconds. I've given instructions for serving one – mainly because at the time I was the only one around to enjoy it – but also because I have a gorgeous single-serve cocktail shaker! However, it is very easy to increase the yield if you need to make more.

How to Make a Low Carb Cottontail Martini

Prepare the martini glass by running a wedge of lime around the rim, and then dipping it into a plate of unsweetened flaked or shredded coconut.

Make the cocktail by combining white rum, heavy cream, unsweetened almond milk, simple syrup (check out my homemade recipe with video tutorial!), vanilla extract, and ice in a cocktail shaker.

Shake well, then strain into the prepared glass. 

To finish, add a low carb marshmallow as the rabbit's tail! You can see my marshmallow suggestions in my recipe for low carb chocolate dipped marshmallows. The ones shown in the photos here are the two-tone La Nouba marshmallows which you can buy from Netrition. They're sweetened with maltitol, and although I personally don't have issues when I eat one or two, I really hope that they switch sweeteners soon! 

If you wanted to skip the marshmallow completely, even a dollop of whipped cream on the side of the cocktail would be a good alternative!

This cottontail martini is the cutest low carb cocktail that you'll see this Easter! It's keto friendly, LCHF, and sugar free! 

Ingredients

  • ¼ cup heavy cream
  • ¼ cup unsweetened almond milk
  • ¼ low carb simple syrup
  • 2 tbs white rum
  • ½ tsp vanilla extract
  • lime wedge, unsweetened flaked (or shredded) coconut, low carb marshmallow for optional garnish

Instructions

  1. Prepare the martini glass by running a wedge of lime around the rim, and then dipping it into a plate of chopped unsweetened coconut.
  2. Make the cocktail by combining the rum, heavy cream, unsweetened almond milk, simple syrup, vanilla extract, and ice in a cocktail shaker.
  3. Shake well, then strain into the prepared glass. 
  4. To finish, add a low carb marshmallow to the edge of the glass for the rabbit's tail!
