As I mentioned in that recipe, it was part one of two, and here's the second part! It was suggested by a reader when I asked in my newsletter for suggestion of recipes to make. So let's look at the exact definition of a Taco Bell Steak Quesadilla:
Steak Quesadillas consist of marinated premium thick cut steak combined with their three-cheese blend and a Creamy Jalapeño Sauce all folded in a freshly grilled tortilla.”
Once you have the sauce, all you need to do is marinate the steak, and grab some cheese and low carb tortillas! By the way, their version is 34g net carbs per serving, mine is only 7g net!
How to Make a Low Carb Steak Quesadilla – Taco Bell Copycat
Prepare the marinade for steak by combining soy sauce, lime juice, avocado (or olive) oil, minced garlic, dried oregano, ground cumin, and chipotle powder.
Cube a sirloin steak and add it to the marinade. Cover and store in the fridge for at least one hour – but it can stay there overnight if necessary.
When you are ready to cook, heat a skillet (or grill pan) over a medium-high heat and use a slotted spoon to transfer the steak to the skillet. Discard any remaining marinade.
While the steak cooks, smear some of the jalapeño sauce onto a low carb tortilla. Mission Carb Balance is still my go-to, but check out my low carb tortilla comparison for more ideas.
When the steak is cooked to your liking, transfer it a plate and keep warm. In a separate skillet (preferably non-stick), place a second low carb tortilla and load it up with shredded cheese. Taco Bell uses a three-cheese combination of cheddar, Monterey jack, and American. Chihuahua is my favorite cheese for quesadillas, but I added some cheddar to it to make it more like the original.
Cook over a medium heat until the cheese starts to melt at the edges. Add the steak, and top with the first tortilla. Cook for a few minutes then carefully flip it over. Cook until the tortilla underneath is crispy and the cheese has melted.
Transfer to a cutting board and cut it into 6 wedges.
Try serving this quesadilla with slices of avocado, sour cream, fresh cilantro, or guacamole!

- 2 tbs lime juice

- 2 tsp garlic paste (or minced garlic)
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp chipotle powder
- 8 oz sirloin steak, cubed
- ¼ cup keto creamy jalapeño sauce
- 2 low carb tortillas (approx 8")
- 1 cup shredded chihuahua cheese
- ¼ cup shredded cheddar
