This recipe is actually part one of two – but is so tasty that I wanted to showcase it on its own! I recently asked my newsletter subscribers if they could think of any recipes or dishes that they wanted me to convert to low carb. One suggestion was a Copycat Taco Bell Steak Quesadilla – and I *love* low carb quesadillas so was happy to figure this one out. Here's the full recipe: Low Carb Steak Quesadilla.

Low Carb Steak Quesadilla – Taco Bell Copycat

One of the key ingredients is the creamy jalapeño sauce – also known as their quesadilla sauce. After a bit of research to find out how the original is made, I came up with my keto friendly version!

How to Make a Keto Creamy Jalapeño Sauce

In a medium bowl, mix together some sour cream, mayonnaise, garlic powder, paprika, cumin, salt, and powdered low carb sweetener (eg confectioner's Swerve). Add some finely diced jalapeños from a jar and a little of the pickling liquid. You could also use fresh jalapeños but the pickled version is nearer to the original sauce.

Combine well, and taste for seasoning and heat. You might like to add some smoky chipotle powder!

Cover and store in the fridge until required. As you can see, I prefer to garnish with fresh peppers for a bolder color! Check out all my low carb jalapeño recipes!

You can use this sauce for all kinds of dishes as well as for quesadillas. It actually makes a great dip for cucumber sticks and celery. Or drizzle it over grilled steak, chicken, or fish!
