Although I have made low carb churros before, these are much quicker to make!
This easy dessert uses small low carb tortillas as the base. I love the street-taco style from La Banderita – and although they're not gluten free, they're actually zero net carbs!
How to Make Low Carb Cinnamon Roll-Ups
Make the glaze by combining softened cream cheese, powdered sweetener (I use Lakanto), unsweetened almond milk, and vanilla extract. A hand mixer is useful for this!
Add more sweetener or milk to get the desired consistency.
Prepare the cinnamon “sugar” by combining granular sweetener (again, I use Lakanto – but the classic version) and ground cinnamon together in a small bowl. Get 20% off everything in the Lakanto store when you use coupon code SAFTC !
Warm up the tortillas in the microwave, and spread each one with some softened butter.
Sprinkle some of the cinnamon mixture over the butter.
Roll up the tortilla, cinnamon-side out, and place on a serving platter. Repeat with the remaining tortillas.
Drizzle the glaze over the roll-ups and/or pour it into a bowl for dipping. Serve warm.
This dessert comes together so quickly – especially if you prepare the glaze and cinnamon “sugar” in advance. These are best eaten straight away.
