The club sandwich: traditionally a combination of chicken, bacon, lettuce, tomato and mayo. It's pretty easy to convert it into a low carb version if you replace the bread with a lettuce wrap! Plus there are lots of extra ingredients you could add to it: avocado, cheese, spinach, mustard and much more. Or you could replace the chicken with turkey!
To make it easier to eat, I mixed the filling ingredients together like a chicken salad, rather than have everything in layers like a regular sandwich. Romaine lettuce leaves are a great choice for the wrap, although you could also make party sized versions with smaller lettuce leaves! Alternatively, use a low carb tortilla to hold everything together.
How to Make Chicken Club Lettuce Wraps
Mix together cooked and chopped chicken (I always have one of those handy bags of pre-cooked chicken in the fridge, which is perfect for this recipe!), cooked and chopped bacon, and a deseeded and chopped tomato. Add in some mayonnaise, stir well, then test for seasoning – add salt and pepper if necessary.
Divide the mixture between four large romaine lettuce leaves, and top each one with a little grated cheddar cheese.
This will serve four people as a super light lunch, or two people who are a bit hungrier. 🙂

- 9 oz cooked chicken, chopped
- 4 slices cooked bacon, chopped
- 1 large tomato, deseeded and chopped
- ½ cup mayonnaise
- salt and pepper
- 4 large romaine lettuce leaves
- ¼ cup grated cheddar cheese
Instructions
- Mix together the chicken, bacon, tomato, and mayonnaise. Stir well, then test for seasoning - add salt and pepper if necessary.
