If you're looking for a filling and healthy lunch dish – try this! With just a few ingredients and a few minutes, you can create a meal that will fill you up and get you through the afternoon without snacking.
For convenience, I've used a store-bought guacamole for this recipe, and pepped it up to make it taste fresher. But you could also try my Creamy Guacamole or Chunky Guacamole and make your own from scratch!
Lettuce wraps are all about getting the right lettuce, and the right consistency of the filling. If it's too runny or the leaves are too small, it can get VERY messy. My favorite leaf right now is Boston lettuce (very similar to Bibb and Butter lettuce). It's perfect for this recipe!
How to Make Chicken Guacamole Lettuce Wraps
Add the guacamole and fresh cilantro to a bowl and stir well. Add a splash of lime juice to give it some zing, plus salt and pepper if necessary. When you have the right balance, add in some chopped cooked chicken and stir to combine. At this point you could also add some finely chopped red onion – it makes a nice color contrast but does add a few carbs.
Wash and dry the lettuce leaves and place them on a serving plate. Divide the chicken mixture between the lettuce and garnish with a little extra cilantro.
This is a really lovely lunch recipe that comes together in just a few minutes!

Ingredients
- 6 oz guacamole
- fresh cilantro
- 1 tsp lime juice, to taste
- salt and pepper
- 9 oz cooked chicken, chopped
- 4 Boston lettuce leaves, washed and dried
Instructions
- Add the guacamole, cilantro, and lime juice to a bowl and stir well. Test for seasoning and add salt, pepper and more lime to taste. When you have the balance right, add in the chopped cooked chicken and stir to combine.
- Place the lettuce on a serving plate. Divide the chicken mixture between the leaves and garnish with a little extra cilantro.
