This tomato salsa is unusual in that I've added sour cream to it. It's easy to make and it all starts with a large ripe tomato.
My favorite way to use this salsa is to prepare it in advance for a weeknight meal, cook up a steak in the evening and place the salsa on top. It adds extra flavor that complements the steak and adds a welcome sauce element to the dish.
I've written this recipe to serve just two people, but it is SUPER easy to increase if you want to serve more people.
How to Make a Creamy Tomato Salsa Dressing
To prepare the sauce, quarter a large tomato and remove the seeds and stalk.
Dice the flesh and add to a bowl. Also add sour cream, cilantro, chipotle powder and lime juice (bottled is fine). I often use the cilantro paste you can buy in tubes for this recipe – the paste seems to blend in better with the rest of the dressing. But fresh cilantro works well too!
Also, if you don't want the heat from the chipotle then paprika makes a great alternative.
Stir well and check for seasoning, adding salt and pepper as necessary.
Leave in the fridge (covered) until required.

Ingredients
- 1 large tomato, approx 3" diameter
- 2 tbs sour cream
- ¼ tsp chipotle powder or paprika
- 1 tsp cilantro paste
- 1 tsp lime juice
- salt and pepper, to taste
Instructions
- Quarter the tomato and remove the seeds. Cut the remaining tomato into dice and place in a bowl.
- Add all the remaining ingredients and stir well.
- Place in the fridge until required.
