After making the low carb cake batter shake, I still had some cake batter flavoring left over. I was inspired by this recipe to make a low carb version and making a tasty fat bomb instead! Check out all my fat bomb recipes!
The brand of flavoring that I use (McCormick) also contains yellow dye, which results in a wonderfully warm yellow finished result. Capella also make one (which you can buy from Netrition) but I don't think it contains dye. It's also a concentrate so I recommend adding a few drops and taste tasting.
How to Make Keto Cake Batter Cheesecake Bites
Add cream cheese and unsalted butter (both room temperature) to a stand mixer bowl. Add heavy cream, low carb sweetener (I used classic Lakanto – get 20% off anything in their store if you use coupon code SAFTC!), and cake batter flavoring.
Beat in the mixer until smooth. It doesn't take long!
Use a spoon to portion out 16 bites into a non-stick mini muffin pan. The pan doesn't need to be lined. Next sprinkle a few keto sprinkles over each bite.
Place in the freezer for an hour, then use a spoon to lift each bite out of the pan. Store in an airtight container in the fridge for a softer result, or in a container in the freezer if you prefer them firmer. Just remove from the freezer a few minutes before eating.
These treats would be great for a special occasion like a baby shower or birthday! You could easily add some food dye to them too if you wanted them to be a different color.
These cheesecake bites are great for having on hand when you fancy a sweet treat!
