I've been making a lot of gin cocktails recently – soon I'll have enough to post a collection of them! Update – check out all my low carb gin drinks! 🙂 I love how the gin works so well with herbs and spices, and the ginger and rosemary are no exception in this drink.
With my Cucumber Gin Fizz recipe, I wanted a ginger element but “cheated” and used sugar free ginger ale. This time I made an infused simple syrup and it was delicious!

How to Make a Keto Rosemary & Ginger Cocktail
To make the syrup, add water, low carb sweetener (I used classic Lakanto), fresh rosemary leaves, chopped fresh ginger, and black pepper to a saucepan.
Bring to the boil, and after one minute remove from the heat and let stand for one hour.
Strain the syrup through a mesh sieve, pushing down on the solids to extract as much of the liquid as possible. It will make about a half-cup of syrup, which you can make up to a day in advance.
When you're ready to enjoy the cocktail, add the syrup to a cocktail shaker together with some gin, fresh lime juice, and ice cubes.
Shake well, strain into two glasses filled with fresh ice, then add a splash of club soda. Garnish with lime slices and rosemary stalks.

- ¼ cup loosely packed fresh rosemary leaves
- 1 oz piece fresh ginger, peeled and roughly chopped
- ¼ tsp black pepper
For the cocktail
- 4 tbs gin
- 2 tbs fresh lime juice
- ice
- club soda
- lime slices and rosemary stalks, to garnish
Instructions
