I cooked this dish for myself the other day and was surprised by how quick it was and how low carb! It was very flavorful and filling, too – so it was just perfect. You could, of course, cook it for more than one person, but if you find yourself in the need of a quick low carb lunch – try this!
How to Make Lemon Garlic Shrimp with Shirataki Noodles
Sauté the garlic and shrimp in a medium pan with a little olive oil. I used large, raw, peeled, tail-on shrimp for this dish but feel free to use whatever shrimp you prefer or have available! Oh and I also use garlic paste, but feel free to replace with fresh if you prefer!
Meanwhile, empty a bag of shirataki noodles into a sieve and rinse thoroughly over the sink. I used Miracle Noodles Garlic and Herb but anything from their variety pack would work fine too. And if you haven't tried shirataki noodles – see my overview of them! They are perfect for low-carbers!

Transfer the rinsed noodles to a bowl and pour boiling water over. Let sit for five minutes.
Drain the noodles and add them to the shrimp pan. Add the lemon juice and continue cooking for a couple of minutes to meld the flavors, then serve. Garnish with fresh parsley and plenty of ground black pepper.

- 2 tsp olive oil
- ½ tsp garlic paste
- 6 large shrimp
- 7 oz shirataki noodles
- 1 tsp lemon juice
- fresh parsley, for garnish
- black pepper
Instructions
