These brandy chocolate truffles are a rich and indulgent adult-only treat! The chocolate mousse-like truffle is rolled in cocoa powder and the hint of alcohol adds a real pop of flavor!

You'll need some good low carb chocolate for this recipe – I used Lily's Original Dark Chocolate (which you can buy from Whole Foods stores, Netrition or Amazon). It's sweetened with Stevia and I just love the flavor – but there are several other options (although I advise staying away from the ones sweetened with maltitol). Oh, and get some Confectioner's style Swerve – you'll find so many uses for it!

How to Make Low Carb Chocolate Brandy Truffles

Break the chocolate into squares and place in a microwave safe bowl. Cook on high until the chocolate has fully melted, stirring regularly. It smells sooooo good!

While the chocolate cools, add the cream and brandy to a stand mixer and whisk until soft peaks form. Add the melted chocolate and some confectioner's Swerve to the cream.

Stir well to combine.

Place in the fridge for ten minutes to let it harden up a little.

Use a teaspoon to portion out the mixture, and use your hands to roll them into a ball. Roll each ball in cocoa powder (this recipe makes 12 balls), and place on a small baking sheet or lined tray.

Return them to the fridge for at least 30 minutes, then they can be transferred to a container. Store in the fridge.
