These low carb confetti cookies (also known as “funfetti” cookies), are sugar free, gluten free, and super easy to make!

Aren't these cookies adorable?!? My family loved them! The recipe is based off the one for my low carb strawberry almond cookies, but with replacing the strawberries and almonds with fun keto-friendly sprinkles!

I use the Rainbow Sprinkles from Good Dee's, which you can get from Amazon. They're made with all-natural colorings, sweetened with erythritol, and contain only 1g net carb per teapoon serving!

How to Make Low Carb Confetti Cookies

Make the dough by combining almond flour, sweetener, softened butter, beaten egg, vanilla extract, and baking powder together in a stand mixer. For the sweetener I used my go-to which is classic Lakanto. Get 20% off everything in the Lakanto store when you use coupon code SAFTC !

Stir in the low carb sprinkles.

Form the mixture into 12 balls (hands are the best tool for this task!), and place them on a non-stick baking sheet. Flatten them down slightly into discs. Had a few extra sprinkles on top, if you like.

Bake  in a preheated oven for 10-12 minutes or until cooked through and starting to turn golden brown.

Let cool for five minutes, then transfer to a wire rack to cool completely. I love how the sprinkles darken after baking!

Store in an airtight container.
