While I was placing an order of low carb goodies at Netrition the other day – I decided to get some more Palmini! By the time that they had arrived, I had decided to make an awesome low carb four cheese and garlic sauce to go with them. I couldn't wait to get started! This recipe is super easy – I can't wait for you to try it and let me know what you think!

How to Make Low Carb Four Cheese “Spaghetti”
Because the Palmini doesn't need cooking, all you need to do is drain it, rinse it, and set it aside. Easy! In the meantime, make the super cheesy sauce! Melt some butter and oil in a skillet or cast iron pan. Add minced garlic, cream cheese and heavy cream, and cook over a low-medium heat until the cream cheese has melted. One cheese down, three to go!
Next add a combination of shredded Parmesan, mozzarella, and Romano. What great flavors!
Stir until the cheese has melted, then add the drained Palmini. Warm the “spaghetti” through, then season with black pepper, and add some chopped fresh parsley.
Serve this amazing and indulgent dish on its own or with a side salad. I assure you that if you're missing pasta, that this is an awesome low carb alternative!

Ingredients
- 8 oz Palmini, drained and rinsed
- 1 tbs butter
- 1 tsp olive oil
- 2 tbs cream cheese
- 2 tbs heavy cream
- 2 tsp minced garlic, or garlic paste
- ¼ cup shredded Parmesan
- ¼ cup shredded mozzarella
- ¼ cup shredded Romano
- black pepper
- chopped fresh parsley
Instructions
- Melt the butter and oil in a skillet or cast iron pan.
- Add minced garlic, cream cheese and heavy cream, and cook over a low-medium heat until the cream cheese has melted.
- Next, add the of Parmesan, mozzarella, and romano. Stir until the cheese has melted, then add the drained Palmini.
- Warm the "spaghetti" through, then season with black pepper, and add some chopped fresh parsley.
