Fried bread cheese is a fantastic appetizer or snack recipe that's low carb, gluten free, and keto friendly!

If you haven't come across bread cheese before, here's what you need to know:
Leipäjuusto (bread cheese) or juustoleipä (pronounced (hoo-stah-lee-pah) is also known in the US as Finnish squeaky cheese. The milk is curdled and set to form a block or disk from two to three centimeters thick. After this, leipäjuusto is baked, grilled, or flambéed to give it its distinctive brown or charred marks. In Ostrobothnia and Kainuu, leipäjuusto is called juustoleipä (lit. “cheese bread”). Other dialects have various names (such as narskujuusto) that refer to the way that fresh leipäjuusto “squeaks” against the teeth when bitten. Source
Juusto, Carr Valley, and Brun-uuston are all good brands but you'll probably find it cheaper in stores than online (check the specialty cheese section of your local store).
How to Make Fried Bread Cheese
Cut the bread cheese into sticks. I used two 6-oz blocks which cut nicely into six sticks each.
Prepare the coating by combining low carb breadcrumbs with grated Parmesan. You could also use pork rind crumbs instead of the breadcrumbs.
Dip each cheese stick into a beaten egg, then into the breadcrumb mixture.
Spray a skillet with non-stick spray and place over a medium heat. Cook the coated cheese sticks – turning frequently – until all sides are golden brown and the cheese is starting to soften. You may need to work in two batches.
Serve the cheese immediately, with some low carb salsa (I love the Green Mountain Gringo brand) or marinara.
