OK. So when one thinks of Halloween treats they're nearly always sweet (with the exception of these Halloween deviled eggs and these low carb Jack O'Lantern stuffed peppers)
! However, this Halloween salad definitely has its place for any Halloween dinner or buffet table!
How to Make a Low Carb Halloween Salad
To make this salad, I've used five ingredients: Orange bell pepper, orange cherry tomatoes (although they actually look dark yellow next to the bell pepper!), jicama, mozzarella pearls (or small balls), and black olives.
However, you could use whatever combination of colors you like:
Orange low carb food: Pumpkin, cantaloupe melon, orange bell pepper, carrots (used sparingly), orange tomatoes, butternut squash (although this might not work so well in a salad!)
White low carb food: Any white cheese (white cheddar, mozzarella, burrata), cauliflower, jicama, white mushrooms, white asparagus, daikon
Black low carb food: black olives, blackberries, black pepper
Or you could even add in some green food: spinach leaves, kale, arugula, broccoli, watercress, swiss chard, lettuce, bok choy
So many variations! I have given nutritional information for the measurements that I have used, so if you change the components then you'll need to recalculate!
Doesn't it look great?!!? It doesn't have a dressing or vinaigrette, but after having taste-tested it, I'm not sure that it needs one!

Low Carb Halloween Salad

Ingredients
- 1 orange bell pepper, deseeded and chopped
- 10 oz golden cherry tomatoes
- 7 oz jicama, peeled and chopped
- 8 oz mozzarella pearls
- 6 oz black olives, pitted and rinsed
Instructions
- Combine all the ingredients in a serving bowl and mix well.
- Store in the fridge until required.
