While I was perusing Pinterest the other day, I came across a recipe for Christmas Jello Balls. It uses regular Jello and canned thick cream – and although the cream is low carb – I couldn't source any. So I decided to use cream cheese instead – easy!

And instead of Jello I used Simply Delish jel dessert – which you may remember from my keto gummies. It's sugar free, aspartame free, keto friendly, and suitable for vegans! It also doesn't contain any artificial colors or flavors – which is particularly good for this recipe because it won't stain your hands when you roll the balls. They didn't turn out as red, though – so the balls don't look quite as Christmassy as I would have liked – but much better for you!

When you roll the cream cheese in the jel powder, it mixes into the cream cheese slightly, giving it color, flavor, sweetness, and texture!

How to Make Low Carb Jello Bombs

Empty a package of Simply Delish jel dessert into a plastic baggie. You can use any flavor – I chose strawberry.

Cut a brick of cream cheese into 16 pieces – this can be a little messy and doesn't have to be exact.

Drop each piece of cream cheese into the bag and shake. Use your hands to form it into a ball.

Continue with the rest of the mixture, placing them on a tray or similar.

Cover and place in the fridge for at least an hour.

Store them in the fridge (covered) – they're perfect for when you just need a little sweet treat!

Instructions

  1. Empty the jel dessert powder into a plastic baggie.
  2. Cut the cream cheese into 16 pieces - this can be a little messy and doesn't have to be exact.
  3. Drop each piece of cream cheese into the bag and shake. Use your hands to form it into a ball. Continue with the rest of the mixture, placing them on a tray or similar. 
  4. Cover and place in the fridge for at least an hour. Store in the fridge (covered).
