Have you tried marinating strawberries? It really enhances the flavor! With just a few ingredients: balsamic vinegar, fresh mint, lemon juice and sweetener, it really elevates the strawberries into something extra special!
Now I should note that balsamic vinegar is the only vinegar that contains carbohydrates (2-3g carbs per tablespoon). Yet it pairs fantastically with strawberries – in fact I've use this combination before with my recipe for Whipped Mascarpone Cream with Balsamic which is served with strawberries – YUM! Only one teaspoon of balsamic is used here, but to great effect! If you wanted to skip it (which would make the recipe sugar free), then of course you can – and you shouldn't buy balsamic especially for this recipe. But it really adds SUCH a good flavor!

Ingredients
- 1 lb fresh strawberries, hulled and halved
- 1 tbs finely chopped fresh mint
- 2 tsp lemon juice
- 2 tsp low carb sweetener
- 1 tsp balsamic vinegar
Instructions
- Add all the ingredients together in a bowl and mix well.
- Cover and leave in the fridge for at least an hour before serving.
