If you're looking for a delicious and refreshing side dish or salad – then you HAVE to try this one. I'll admit that there IS quite a bit of chopping involved, but I found that I got into a rhythm and it wasn't exactly hard. The mustardyness of the radishes work so well with the cool cucumber, and both combine well with the parsley and lemon juice.
This radish and cucumber salad would work SO well with chicken, pork, fish, or pretty much anything that you put on the grill!
How to Make a Low Carb Radish and Cucumber Salad
To prepare this radish and cucumber salad, top and tail those beautiful radishes and de-seed the cucumber to stop the salad getting too watery. Then dice them as finely as you like.
Once that's done, mix them together and add chopped fresh flat-leaf parsley, lemon juice, olive oil, salt, and pepper.
This is one of those salads where, if you prepare it a few hours in advance of serving it – it only gets better!

Ingredients
- 1 lb radishes
- ½ English cucumber
- ¼ cup chopped fresh parsley
- 1 tbs lemon juice
- 1 tbs olive oil
- salt and pepper
Instructions
- Top and tail the radishes and dice them. Deseed the cucumber and dice.
- Mix them together and add the parsley, lemon juice, olive oil, salt, and pepper.
