Aaaaah, S'mores. That classic combination of graham crackers, chocolate, and melted marshmallow. Thought you'd never be able to enjoy those flavors again on a low carb diet? Think again!
This low carb S'mores pie only uses six ingredients – so I've used a LOT of hacks and shortcuts! One of the main ingredients is a very significant time-saver: this Graham Cracker Style Pie Crust Mix from Dixie USA. There are two packs of mix with each bag, and total carb count for the whole mix is 9g – net!! It doesn't even have a scary ingredients list; the main ingredients are pecans, almonds, soy flour, soluble vegetable fiber, and flax seeds.
Added to the pie crust mix I've made a filling from sugar free chocolate Jello pudding (which you can easily buy in grocery stores but I found that it was actually cheaper at Netrition!) and then topped it with melted low carb marshmallows from La Nouba.
Update: Try using Simply Delish Chocolate Pudding mix instead – it is aspartame free, gelatin free, and doesn't contain any artificial flavors or colors!

How to Make a Low Carb S'mores Pie
To make the crust, melt some unsalted butter then add the pie crust mix. Stir well, then press it into a 9½” pie plate. Leave in the fridge for at least an hour.
To make the chocolate filling, add the Jello powder, unsweetened almond milk and some xanthan gum to a stand mixer and whisk until smooth.
Note: The Jello pudding won't set when blended with almond milk, so you DO need the xanthan gum. You could also use two teaspoons of cornstarch as well but this will increase the carbohydrate count.
Pour the filling into the chilled pie crust, smooth over, then return it to the fridge until set (allow at least an hour).
To finish, add the marshmallows to a bowl with a little water and melt them in the microwave in short bursts – mine only took 45 seconds but all microwaves are different!
Spread the gooey marshmallow over the chocolate – a small palette knife dipped in water is useful here as it's pretty sticky! Next, use a cook's blowtorch to brown the top of the marshmallow – or you could put it under the broiler but watch it VERY carefully!
Finally, use a Microplane to finely grate some low carb chocolate over the finished dessert. This stage is completely optional but I think it looks good.

Just like a real S'mores, this low carb Smore's pie can be pretty sticky! Try using a knife sprayed with a little nonstick spray to slice and serve the pie.

Low Carb S’mores Pie
This low carb S'mores Pie is a sugar free recipe that requires just six ingredients!
Ingredients
- 1 packet Dixie USA Graham Cracker Style Pie Crust Mix
- 2 tbs unsalted butter
- 1.4 oz packet of Sugar Free Jell-o Chocolate Pudding
- ¼ tsp xanthan gum
- 1½ cups unsweetened almond milk
- 1 (75 g / 2.7oz) bag La Nouba marshmallows
- 2 tbs water
- finely grated low carb chocolate to garnish, optional
Instructions
- Melt the butter and mix it with the Pie Crust Mix. Press into a 9½" pie plate. Place in the fridge for at least one hour.
- Add the Jello powder, milk, and xanthan gum to a stand mixer bowl and whisk until smooth.
- Pour into the chilled crust, then cover. Place in the fridge for at least one hour or until set.
- Place the marshmallows and water in a bowl and microwave in short bursts until melted. Spread the marshmallow over the top of the pie.
- Use a chef's blowtorch to toast the top of the pie, then garnish with grated chocolate, if using.
- Chill in the fridge for at least 2 hours before serving.
