After MANY years of using Pinterest, my home feed mainly features keto and low carb recipes and articles. But every now and then a high carb recipe appears, and rather than get irritated, I often use it as inspiration for a new low carb recipe. Like when I saw this recipe from How Sweet Eats for Creamed Spinach Mac and Cheese. It looked SO good and I knew that I wanted to make a low carb version. All I needed was some low carb pasta, omit the milk and flour, and come up with a low carb topping. EASY!
I decided to use the low carb elbows from Great Low Carb Bread Company – which you might remember from my Low Carb Pasta with Vodka Sauce. You can get the pasta from Netrition – and pick up a bunch of other low carb goodies while you're there!
So I combined this pasta with a creamed spinach recipe that I often make, added some extra cheese and finished it with a topping of grated Parmesan and pork rind crumbs. It was SO good!
How to Make a Low Carb Creamed Spinach Mac and Cheese
Cook the pasta according to the pack instructions (usually 10 minutes in boiling water), then drain. While the pasta cooks, add some cream cheese and garlic paste to a small cast iron skillet. Place over a low-medium heat until the cream cheese starts to melt. Add some baby spinach – in batches as necessary until it wilts down.
Add some shredded cheese (I used a triple cheddar blend but anything that melts well is good), and stir to combine.
Next, add the cooked and drained pasta to the skillet, stir well, and add salt and black pepper to taste.
Combine some grated Parmesan and pork rind crumbs together in a bowl. If you want to make this dish vegetarian you could omit the pork rind crumbs and double the Parmesan instead.
Spread the mixture over the pasta and cook under a hot broiler for 5 minutes or until golden brown.
This dish is low carb comfort food at its best!
It contains 12g net carbs for a very filling portion. If this is too high for your way of eating, consider making it into three or four servings and adding a side salad!

- 4 oz low carb elbow pasta
- ¼ cup cream cheese
- 1 tsp garlic paste
- 5 oz fresh baby spinach
- ½ cup shredded cheese (eg cheddar)
- salt and black pepper
- ¼ cup grated Parmesan
- ¼ cup pork rind crumbs
Instructions
- Cook the pasta according to the pack instructions (usually 10 minutes in boiling water), then drain.
- While the pasta cooks, add the cream cheese and garlic paste to a small cast iron skillet. Place over a low-medium heat until the cream cheese starts to melt. Add the baby spinach - in batches as necessary until it wilts down.
- Add the shredded cheese, and stir to combine.
- Next, add the drained pasta to the skillet, stir well, and add salt and black pepper to taste.
- Preheat the boiler to High.
- Combine the grated Parmesan and pork rind crumbs together in a bowl.
- Spread the mixture over the pasta and cook under the broiler for 5 minutes or until golden brown.
