These cookies are seriously easy to make! Mix up the dough, then stir in some fresh strawberries and almond slices. Bake. Enjoy!

The strawberries not only add to the sweetness but provide a wonderful pop of color, too. You could also try it with different kinds of berries: raspberries or blueberries would also be delicious! 

How to Make Low Carb Strawberry Almond Cookies

Make the dough by combining almond flour, low carb confectioner's sweetener (Swerve is my go-to brand), softened butter, a beaten egg, vanilla extract, and baking powder together in a stand mixer.

Stir in some sliced almonds and chopped fresh strawberries. The sliced almonds add a really nice textural contrast to the cookies. Oh – and if you don't have a huller tool then you should get one – they're life-changing when it comes to preparing strawberries!

Form the mixture into 12 balls (hands are the best tool for this task!), and place them on a baking sheet lined with a silicone mat or baking parchment. Flatten them down slightly into discs.

Bake in a preheated oven for about 10 minutes or until cooked through and starting to turn golden brown.

Let cool completely, then store in an airtight container.

  2. Make the dough by combining almond flour, confectioner's sweetener, softened butter, beaten egg, vanilla extract, and baking powder together in a stand mixer.
  3. Stir in the sliced almonds and some chopped fresh strawberries.
  4. Form the mixture into 12 balls (hands are the best tool for this task!), and place them on a baking sheet lined with a silicone mat or baking parchment. Flatten them down slightly into discs.
  5. Bake for about 10 minutes or until cooked through and starting to turn golden brown.
  6. Let cool completely, then store in an airtight container.
