This recipe is a combination of two of my go-to recipes: low carb chicken tenders and my Mexican seasoning blend.
I have the blend on hand at all times, but I've included the quantities that you'll need for this recipe.
I've also added one of my new favorite low carb products – pork rind crumbs! The result is wonderfully crusted chicken tenders that are well spiced but not spicy. If you only have access to pork rinds, then you'll need about an ounce for this recipe, then crush them finely by placing them in a sealable plastic bag and bashing them with a meat tenderizer.
This recipe serves 3 people, but would be very easy to double if you need to feed more!
How to Make Low Carb Taco Chicken Tenders
In a bowl, combine some seasoned pork rind crumbs and the Mexican seasoning blend (equal parts paprika, dried oregano and ground cumin).
Brush some chicken tenderloins with oil, then coat in the coating.
Place the coated chicken pieces onto a baking sheet lined with a silicone mat or foil. I don't find that I need to season with salt and pepper for this recipe – the pork rinds add saltiness and the spices add a full on flavor of their own!
Roast in a preheated oven for 20-25 minutes or until the chicken has reached an internal temperature of 165F.
These tenders would be great served with loaded cauliflower mash, cucumber, tomato, and avocado salad, or low carb rice with cilantro and lime!

Ingredients
- ½ cup pork rind crumbs
- 1 tbs ground cumin
- 1 tbs dried oregano
- 1 tbs paprika
- 1 lb chicken tenderloins - about 9
- 1 tbs olive oil
Instructions
- Preheat the oven to 400F (200C).
- In a bowl, combine the pork rind crumbs, cumin, oregano and paprika.
- Brush the chicken tenderloins with oil, then cover them in the coating.
- Place the coated chicken pieces onto a baking sheet lined with a silicone mat or foil.
- Roast for 20-25 minutes or until the chicken has reached an internal temperature of 165F.
Notes
1.4g net carbs per serving of approximately three tenders.
