Hot summer? You need a refreshing cocktail! This sugar free and low carb watermelon-based drink can be made alcoholic or non-alcoholic, whichever you prefer. Watermelon isn't super low in carbs, so plan to only have one of these drinks as a special treat. Here's my video to show you how easy it is to make – you're going to love it!

How to Make a Low Carb Watermelon Cocktail
Dice up some fresh watermelon, removing any large seeds that you see. Add it to a blender with lime juice, white rum (if using) and low carb sweetener of your choice – I prefer a liquid sweetener for this recipe, something like a few drops of liquid Stevia or a tablespoon of homemade low carb simple syrup would be perfect. Or you might not need it at all, depending on your preference.
Blend until smooth, then strain the mixture through a sieve into two glasses to remove the pulp. I'm afraid you'll have to do this stage otherwise the cocktail will have an odd texture.
Next, add some ice cubes to each glass.
Then top up with club soda or seltzer water.

This watermelon is super refreshing and perfect for the summer! Low carb and sugar free recipe with optional alcohol.
Ingredients
- 1 cup diced watermelon
- 1 tbs rum, optional
- 1 tsp lime juice
- 1 tsp liquid sweetener, eg liquid Stevia
- ice
- club soda or seltzer water
- mint sprigs to garnish, optional
Instructions
- Add the watermelon, lime juice, rum (if using) and sweetener to a blender and blend until smooth.
- Strain the mixture through a sieve into two glasses.
- Add some ice and top up with club soda.
- Garnish with mint, if using.

I made a watermelon kombucha with a scoop of watermelon electrolytes. Yum. You could also add the electrolytes to 1 oz. of tequila, seltzer and ice if you want it to be alcoholic.
