Hot summer? You need a refreshing cocktail! This sugar free and low carb watermelon-based drink can be made alcoholic or non-alcoholic, whichever you prefer. Watermelon isn't super low in carbs, so plan to only have one of these drinks as a special treat. You're going to love it!
And although you might not eat watermelon on a regular basis, it's good to know that it's a good source of vitamin A, B6 and C, lots of lycopene, antioxidants and amino acids.
How to Make a Low Carb Watermelon Cocktail
Dice up some fresh watermelon, removing any large seeds that you see. Add it to a blender with lime juice, white rum (if using) and low carb sweetener of your choice – I prefer a liquid sweetener for this recipe, something like a few drops of liquid Stevia would be perfect. Or you might not need it at all, depending on your preference.
Blend until smooth, then strain the mixture through a sieve into a jug to remove the pulp. I'm afraid you'll have to do this stage otherwise the cocktail will have an odd texture.
Divide the mixture between two glasses, add some ice cubes and top up with club soda or seltzer water.

- 1 cup diced watermelon
- 1 tbs rum
- 1 tsp lime juice
- 1 tsp liquid sweetener, eg liquid Stevia
- club soda or seltzer water
- Add the watermelon, lime juice, rum and sweetener to a blender and blend until smooth.
- Strain the mixture through a sieve into a jug.
- Divide the mixture between two glasses. Add ice and top up with club soda.
