This watermelon cocktail is a super refreshing low carb drink!

Hot summer? You need a refreshing cocktail! This sugar free and low carb watermelon-based drink can be made alcoholic or non-alcoholic, whichever you prefer.
Dice up some fresh watermelon, removing any large seeds that you see. Add it to a blender with lime juice, white rum (if using) and low carb sweetener of your choice.
Blend until smooth, then strain the mixture through a sieve into a jug to remove the pulp. I’m afraid you’ll have to do this stage otherwise the cocktail will have an odd texture.
Divide the mixture between two glasses, add some ice cubes and top up with club soda or seltzer water.

- 1 cup watermelon diced
- 1 tbs rum
- 1 tsp lime juice
- 1 tsp low carb sweetener
- club soda or seltzer water
- Add the watermelon, lime juice, rum and Splenda to a blender and blend until smooth.
- Strain the mixture through a sieve into a jug.
- Divide the mixture between two glasses. Add ice and top up with club soda.
