I think there is something very pleasing about food presented on skewers. It somehow makes it more inviting and interesting than just a pile of meat and vegetables! With this recipe I have kept it simple – just steak and mushrooms. The key is the red wine marinade, which adds SO much flavor for very few carbohydrates. Although most of the marinade is discarded, I wouldn't suggest using red wine that you wouldn't consider drinking on its own. And you shouldn't really use an expensive bottle either. Just something light and fruity would be perfect.

How to Make Red Wine Marinated Beef Skewers
So first – the marinade. Stir together red wine, olive oil, thyme (dried or fresh) and soy sauce.
Cut some sirloin steak into chunks – maybe about 1″ square. These huge steak was probably about 1½ pounds after I'd trimmed it.
Drop them into the marinade, cover, and leave in the fridge for at least three hours. I'm not going to write “overnight” because generally the time I am least likely to think about dinner is the night before. So I prepare them in the morning and leave them to marinate all day.
30 minutes before you need to start cooking, soak some wooden skewers in water. I used eight super long ones. Or you could use metal ones! After the skewers have soaked, thread on the steak, alternating with some mushrooms.
Discard the marinade and cook the skewers on the grill, under the broiler, or on a large grill pan until the beef is cooked to your liking. Approximately 6-8 minutes, turning once half way through cooking time. But this really depends on how hot your heat is, how big the pieces are on the skewers, how close they are to the heat, and of course how well done you like your beef!

Red Wine Marinated Beef Skewers
These red wine marinated beef skewers work well at any time of year - on the grill or under the broiler. Low carb and keto friendly recipe.
Ingredients
- 1½ lb sirloin steak, trimmed and cut into 1" cubes
- ½ cup red wine
- 2 tbs soy sauce or tamari
- 2 tbs olive oil
- ½ tsp thyme leaves, dried or fresh
- 1 lb white mushrooms
- salt and pepper
Instructions
- Mix together the red wine, soy sauce, thyme and olive oil. Add the beef and leave to marinate for at least 3 hours.
- Soak wooden skewers in water for at least 30 minutes.
- Thread the beef and mushrooms onto the skewers, and discard any remaining marinade.
- Cook on a grill or broiler until steak is cooked to your preference, and season with salt and pepper before serving.
