How to Make a Tequila & Lime Marinated Steak Salad

Make the marinade by combining olive oil, tequila, onion powder, and the zest and juice from a lime in a large plastic bag.

Add the steak – I used a thick cut sirloin but you could also use flank steak or flat iron. Seal the bag and place in the fridge to marinate for two hours.

Remove the steak from the fridge for 15 minutes before cooking. Make the avocado dressing by combining an avocado, fresh cilantro, sour cream, and lime juice in a food processor. Add enough water to make a pourable dressing, then taste for seasoning and add salt and pepper as needed.

Take the steak out of the bag and discard the marinade. Season on both sides with salt and pepper, then cook the steak to your liking on a hot grill or grill pan

Place some salad leaves and shredded cheese into a serving bowl. Slice the steak and place it on top, then drizzle with a little of the dressing. Serve the rest of the dressing on the side.

The steak has such great flavor and texture – and the avocado dressing works perfectly with it! Afterwards it occurred to me that some strips of low carb tortilla chips might be a nice addition – I'll try it next time!

Note – nutritional data is best estimate as the majority of the marinade is not consumed.
