Although you won’t be fooled into thinking that this chipotle cauliflower cheese is actually mac and cheese – it might come a close second! The cauliflower flavor isn’t very strong, due to the cheese and the chipotle used. Here I have used a can of condensed cheddar soup – it does add to the carb count significantly, but it is a super convenient way of getting that thick cheese sauce. The carb count is still only 11.1g per serving – and it is very filling! The slow cooker makes the recipe very easy, just mix the sauce together first then dump it into the crock pot with the cauliflower!
In a large saucepan, mix together the condensed cheddar soup, heavy cream, unsweetened almond milk, onion powder, chipotle powder and salt and pepper. Cook over a medium heat until smooth.
Add the shredded cheese (cheddar, Italian blend, or similar) and stir until the cheese has melted.
Spray a small slow cooker with non-stick spray, and add cauliflower florets. Pour over the sauce and mix well.
Cook on low heat for 3 hours or until the cauliflower is cooked to the desired tenderness.
Serve sprinkled with chipotle flakes, if you fancy some extra heat!
