These low carb chocolate waffles are easy to make and are ideal for breakfast or brunch!

This is the second recipe for low carb waffles on my blog - the first version is a plain waffle with delicious whipped butter - so good!
But I decided that I just needed a CHOCOLATE waffle! It uses just six ingredients, and although I've given quantities for one waffle here - I heartily recommend increasing the amounts and making more! Keep any leftovers in the freezer - then reheat them in the toaster or microwave.
This waffle is more filling than a regular version, so I've suggested that one large waffle serves two people. Hopefully you'll agree with me!
How to Make Low Carb Chocolate Waffles
In a large bowl whisk together an egg and unsweetened almond milk. Add almond flour, low carb sweetener (eg Lakanto or granular Swerve), unsweetened cocoa powder and baking powder.
Warm up a waffle iron and spray it with non-stick spray if necessary. These low carb waffles don't hold together as well as regular ones, so I definitely recommend using the spray, even if your waffle iron is non-stick.
Add the batter and cook it until ready - mine takes four minutes but waffle irons will vary. As a rough guide, wait until the steam has stopped escaping from the waffle maker before opening it up.
Serve it with whatever toppings you like! Sugar free maple syrup would be good, or some whipped cream! I love the low carb maple syrup from Lakanto!!!
The waffles are shown here with melted a ChocZero dipping cup and fresh strawberries but unfortunately they don't make the dipping cups any more! But you could also make your own chocolate sauce!
