(Ha! – I just noticed that I am still using those yellow napkins – something must say “margarita” to me about them!)
The concept of how to low-carbify this popular cocktail is pretty simple – replace the orange liqueur with orange extract, and the simple syrup with a sugar free version. In the past I've used the flavorless version from Da Vinci – but these days I make my own low carb simple syrup!
How to Make a Low Carb Cucumber Margarita
For this recipe you'll need all of the ingredients mentioned above, plus of course some good quality tequila, fresh cucumber (I prefer English cucumbers for taste and relative lack of seeds), and ice.

To make the cucumber margarita, slice and quarter some cucumber, and add it to a cocktail shaker. Use a muddler to grind and press the cucumber so that as much juice as possible is extracted. Add some lime slices and muddle again.
Add some tequila, orange extract, low carb sweetening syrup and ice to the shaker, and shake well.
Fill a short tumbler style glass three-quarters full with ice, then strain the cocktail over the ice. Garnish with a slice of cucumber.
Oh – and I decided not to add a salt rim to the glass for this recipe – but if you want to add one, just wipe a slice of lime around the rim of the glass, then dip it in salt.

Ingredients
- 4 slices English cucumber
- 2 slices lime, halved
- 2 tbs tequila
- ¼ tsp orange extract
- 2 tbs low carb simple syrup
- ice
- cucumber slice, to garnish
Instructions
- Slice and quarter the cucumber, and add it to a cocktail shaker. Use a muddler to grind and press the cucumber so that as much juice as possible is extracted.
- Add the lime slices and muddle again.
- Add the tequila, orange extract, sweetening syrup and ice to the shaker, and shake well.
- Fill a short tumbler style glass three-quarters full with ice, then strain the cocktail over the ice. Garnish with a slice of cucumber.

Actual carbohydrate value will be lower than this because the pulp from the cucumber and lime is not consumed.
