I'll admit that I'm not much of a nut-eater – but I know that they are a great source of fiber and make a very handy snack. But which ones are low carb? Check out this table of nutritional data for one ounce of nuts and seeds:

How to Make Low Carb Cocoa Nuts
Add the nuts to a small slow cooker (I use a small 3-quart one or an Instant Pot with slow cooker option) – my mixture was walnuts, pecans and slivered almonds. Add melted butter, vanilla extract, cocoa powder and sweetener (I used Swerve), and stir well.
Cook on high for 1 hour. They will smell absolutely amazing when they are cooking!!! Spread the nuts onto a baking sheet to cool.
Store in an airtight container and enjoy this low carb snack anytime!

Ingredients
- ½ cup pecan halves
- ½ cup walnut halves
- ½ cup slivered almonds
- 2 tbs unsweetened cocoa powder
- 1 tsp vanilla extract
- 2 tsp low carb sweetener, Swerve or similar
- 2 tbs unsalted butter, melted
Instructions
- Place all the ingredients in a small slow cooker and stir well.
- Cook on high for 1 hour.
- Spread the cocoa nuts out onto a baking sheet to cool.
- Store in an airtight container.

Yes I'm sure they could - but you'd probably have to watch them carefully so that they don't burn.

Apparently all slow cookers are not created equal. Mine was smoking in less than an hour. Burnt.
