So after my olive Christmas tree a few weeks ago, I thought I was done with tree-shaped food for this blog – but no, here's one more! But it's super simple, and with just three ingredients you can make loads of these little trees. You could even get the kids to help you once the cucumber has been sliced!
Oh, and I prefer to use English cucumber – it's longer and although not seedless, the seeds are a lot smaller than in a regular cucumber.

How to Make a Cute Christmas Appetizer
Prepare the English cucumber by slicing it thinly – you could use a mandoline or a vegetable peeler.
I like to start on one side and slice until I get near to the center, then flip it over onto a wooden board and peel/slice from the other side. Cut each slice into half.
To construct the tree, concertina a slice of cucumber reducing in size at one end.
Poke a wooden toothpick through the cucumber and then into a halved cherry tomato (cut side down).
Repeat with the rest of the cucumber slices. Next, cut a block of cheese (I used white sharp cheddar) into slices then use a small star-shaped cookie cutter to make the cheese stars.
Place the cheese stars on top of the cucumber and the appetizer is ready to serve!
What I like about these little trees is that guests can see exactly what they're getting, they're easy to pick up, and not messy!

- Approx. 12 cherry tomatoes, halved
- 8 oz block of cheese (eg white cheddar), sliced
Instructions
