I don't know about you, but I never tire of cauliflower! Whether I'm mashing it, ricing it, making it into a risotto or even using it as a filling for these amazing Bacon Bombs! I was in CostCo recently and noticed a pack of four bags of pre-riced cauliflower, each containing 1lb of “cauli-rice”. I was sold! The ricing is SO uniform that it makes it both visually and texturally pleasing. It's absolutely perfect for this cauliflower fried rice recipe.  But if you want to make your own, then you can check out my tutorial on how to make cauliflower rice.

How to Make Cauliflower Fried Rice with Bacon, Asparagus and Poached Eggs

To start making the fried “rice”, melt some butter together with some olive oil in a large pan or cast iron skillet. Chop up some bacon and sauté it until it starts to get crispy. Slice some asparagus, and add the stalks to the pan. Continue to cook for five minutes, then add the asparagus tips. Taste for seasoning, and add salt and pepper as necessary. Turn the heat down to the lowest setting, while you prepare the poached eggs.

There are many ways to do this, and you probably have a favorite method, but I've recently started poaching them in my Instant Pot! I've even written a tutorial on how to poach eggs in the Instant Pot!

Add the poached eggs to the skillet, grind a little extra black pepper over the top, and serve.

This recipe makes two LARGE portions. If you're following a keto diet, 9g net might still be too high for you – although I should note you don't need anything on the side with this dish. A good alternative would be to remove a third of the cauliflower/bacon/asparagus mix, then add the eggs to pan. Divide the contents of the pan between two, with an egg for each. You'll then have a third portion as leftovers for the next day.

Ingredients

  • 1 tbs butter
  • 1 tbs olive oil
  • 4 slices bacon, chopped
  • 1 lb riced cauliflower
  • ¼ cup chicken broth
  • 6 asparagus stalks, sliced
  • salt and black pepper
  • 2 eggs

Instructions

  1. Melt the butter together with the olive oil in a large pan or cast iron skillet. Add the bacon and sauté it until it starts to get crispy.
  2. Add the riced cauliflower and some chicken broth, and continue to cook until the cauliflower starts to soften.
  3. Slice some asparagus, and add the stalks to the pan. Continue to cook for five minutes, then add the asparagus tips. Taste for seasoning, and add salt and pepper as necessary.
  4. Turn the heat down to the lowest setting, while you prepare the poached eggs using your preferred method.
  5. Add the poached eggs to the skillet, grind a little extra black pepper over the top, and serve.
