Deviled eggs are one of those appetizers that are always popular with guests. They're satisfying, easy to eat, and have a nostalgic reaction with most people! They're also ideal for low carbers, because pretty much any recipe has a low carbohydrate count! Here are my favorite deviled egg recipes:
So for a recent neighborhood Christmas party I decided to make some festive appetizers. I thought about coloring the egg whites like I did for my Easter Deviled Eggs, but in the end I chose to keep them white, but make the filling bright green. Food dye? No! It's baby spinach!

How to Make Christmas Deviled Eggs
Cook the hard boiled eggs using your preferred method (boil them or cook them in the Instant Pot). When they are cooked, place them in an ice bowl to stop the cooking.
Carefully peel the eggs and slice them in half. Remove the egg yolks and place them in a food processor. Set the egg whites aside (or onto an egg platter).
Prepare the filling by adding baby spinach, mayonnaise, salt and pepper to the egg yolks. Process until smooth.
Spoon the spinach mixture into a piping bag and pipe the filling into the egg whites.
To finish, make tiny little circles (I think of them as holly berries!) from a slice of roasted red pepper (the jarred kind is perfect). You can cut tiny pieces by hand or use a straw to make more even circles. I think about three per deviled egg looks good.

- 6 tbs mayonnaise

- small strip of roasted red pepper
