How to Make Low Carb Pecan Cookies
First you'll need to grind up some pecans – use a food processor or the blade attachment on a stick blender. The pecans are reduced to dust in just a few seconds! The finer the nuts, the better the cookies will be.
In a bowl, add an egg and beat to mix. Pour in the ground pecans and add some low carb sweetener. I use Lakanto – get 20% off if you use coupon code SAFTC! – but something like granular Swerve would be a good alternative. Mix well – it forms a loose “dough” very quickly.
Divide it into 12 sections and use a teaspoon to place them on a baking sheet lined with a silicone mat or parchment paper.
Bake in a preheated oven for 8-10 minutes until firm. Let cool then transfer to a cooling rack. These cookies are best eaten within one day. However, if you have them around for longer they'll still taste good, just a little softer!

Ingredients
- 1 cup chopped pecans
- 1 egg
- ¼ cup Lakanto, or similar sweetener
Instructions
- Preheat the oven to 350F.
- Grind the pecans as finely as possible using a food processor.
- Break the egg into a bowl and whisk until lightly beaten. Add the pecans and sweetener, then mix well.
- Divide the mixture into 12, then place each portion onto a baking tray lined with a silicone mat.
- Bake for 8-10 minutes until firm. Leave to cool slightly then transfer to a cooling rack.
- When completely cool, store in an airtight container.
Notes
1.3g net carbs per serving of two cookies (recipe makes 12 cookies).

Hi, I watched the video and then mixed up the ingredients and my mix is much thicker than the one in the video which looks quite thin. Is there a secret to mixing this up to make it thinner?

We liked these. I added cinnamon to one batch and fennel to another. I used 3 TBSP brown sugar for sweetener. Even my non-nut-liker husband liked these! Thanks for easy recipe that tastes good!

These were amazing!! Thank you so much!! I am new to having to eat a gluten free diet. I can have cookies now? And they tastes amazing?! I can't tell you how happy I am I came across your page! I followed another user's comment to sweeten them up since I do love sweets. But, I tweeked using 2 tbs Splenda brown sugar sub and 1 tsp baking powder. Also added shredded coconut and some chocolate chips. Tastes like an almond joy flavored cookie!! Yummy!!! Even my teen daughter loves them...

What would happen if you didn't grind your pecans so fine. I like a little crunch to my pecans.
