I used an 8×8 baking dish. If you want to double the recipe, reach for a 9×13 baking pan.

I used homemade bread crumbs for the recipe. I used low carb bread. But if you want, use crushed pork rinds in place.
Parmesan Cheese Topping
So for the topping you can leave off the bread crumbs. You can add a layer of Parmesan cheese and as it bakes it comes perfectly golden.
Cut of Chicken
For the chicken we used thighs. If you want to swap with chicken breast, simply adjust the cooking time.
Feel free to season the chicken anyway you want. I have also used garlic salt and parsley, Cajun seasoning, etc.

How to store leftovers?
You will want to store any chicken you don't eat in an airtight container for 2-3 days. Just reheat in the microwave for a quick heat. Or opt to warm it up in the oven. If you warm the chicken in the oven, cover with foil to prevent the chicken from drying out.
Can you freeze mayonnaise chicken?
This recipe doesn’t thaw well once it has been baked. You will find the mayonnaise topping separates quite a bit and it will alter the flavor a bit.
Can I use Miracle Whip instead of mayonnaise?
Miracle whip tends to really alter the flavor. It will have a bit of a sour tangy flavor. Plus you will find it won’t get that golden crust on top of the chicken.
What happens if my chicken is becoming too brown on top?
Every oven heats slightly different but if you experience it is over cooking on top bit it needs more time, here is what to do. Take aluminum foil and lightly please over the pan bit allowing the center foil to rise up like a tent. This allows the chicken to cook but without over browning your to of chicken.
- 4-6 chicken thighs
- 1/4 cup hot sauce, such as Frank's Red Hot
- 1/2 cup mayonnaise
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon garlic powder
- 1/3 cup Keto breadcrumbs, homemade or store bought
- Preheat the oven to 425F degrees.
- Arrange the chicken thighs in an 8” x 8” baking dish.
- Pour the hot sauce over the chicken thighs, and set aside.
- In a small bowl, mix together the mayonnaise, Parmesan and garlic powder.
- Spread the mayonnaise mixture evenly over the top of the chicken. Sprinkle with the keto-friendly breadcrumbs.
- Bake 20-25 minutes, until the top is golden brown, or until an inserted meat thermometer reads 165F.
