Key Ingredients & Substitutions
Ground Turkey: A leaner alternative to beef, ground turkey is the star of the show here. For a juicier meatloaf, opt for ground turkey that isn't too lean. I used 85% lean, 15% fat turkey.
Almond Flour: Used as a binder in place of traditional breadcrumbs, almond flour keeps this meatloaf keto-friendly while adding a subtle nutty flavor. if you don't have almond flour, ground pork rinds can be used as an alternative.
Parmesan Cheese: Adds a depth of flavor and helps to bind the meatloaf together. Feel free to substitute with other hard, grated cheeses like Asiago or Romano.
Sugar-Free Ketchup: A low-carb alternative to the regular ketchup that tops all classic meatloaf recipes, this ingredient adds a tangy sweetness without the added sugar.
Helpful Tips
Serving Suggestions: Serve this turkey meatloaf up with low carb sides like Cheesy Mashed Cauliflower, Lemon Pepper Green Beans, Roasted Brussels Sprouts, or a refreshing Fennel Salad.
Storing Leftovers: Store the meatloaf in the refrigerator, in an airtight container, for 3-5 days. You can also freeze for up to 3 months. I recommend freezing the meatloaf in slices for convenience. To reheat, thaw and warm in the oven until heated through.
Don't Overmix: Mix the ingredients until just combined to avoid a too dense meatloaf.
Let It Rest: Allow the meatloaf to rest for about 10 minutes after baking. This rest period helps the juices redistribute, making it easier to slice.
Use a Thermometer: Use a meat thermometer to ensure the meatloaf reaches an internal temperature of 165°F, indicating it's fully cooked and safe for digging in.
Variations
Add Veggies: Amp up the fresh flavor and nutrition value by adding some finely chopped vegetables such as bell peppers or zucchini to the meat mixture.
Add a Spicy Kick: Mix in some chopped jalapeños or a dash of chili flakes for a spicier meatloaf.
Add Bacon: Because why not? Bacon adds flavor to everything.
Try a New Glaze: Experiment with different low-carb glazes like a mix of sugar-free ketchup and Worcestershire sauce, the Tamarind Glaze from these pork ribs, or this Low Carb Hoisin Sauce.
