I *love* how simple this recipe is – just two ingredients is all that you need! It is quick to make and works well with steak, chicken or even as a warm salad dressing! I have given instructions for just one serving, but it is VERY easy to increase this for more people.
How to Make a Low Carb Blue Cheese Sauce
Mix blue cheese crumbles and heavy cream together in a saucepan. Stir over a low-medium heat until the blue cheese starts to melt. Keep cooking until the sauce starts to bubble and thicken. Then serve! I don't think it is necessary to even add salt or black pepper – the blue cheese just adds so much flavor on its own!
So this was my lunch the other day – steak and romaine lettuce with blue cheese sauce. Filling and delicious and all for under 3g net carbs!

- ¼ cup heavy cream
- 2 tbs blue cheese crumbles
- Add both ingredients to a saucepan and heat over a low-medium heat until the cheese starts to melt.
- Continue cooking until the sauce is bubbling and starting to thicken. Serve immediately.
