This luxurious dessert or sweet treat is ready in just a few minutes, and only requires three ingredients! You'll need some low carb tortillas (I used 6″ Carb Balance ones from Mission – 4g net carbs each – but check out my full low carb tortilla comparison and review.), and some low carb chocolate chips (eg Lily's – you can buy them from Amazon). I've also served with a little powdering of low carb Confectioner's Swerve but it is completely optional.
The result is ooey, gooey, and utterly decadent! Although I've used cream cheese in the recipe here, if you have mascarpone on hand that would work well too.
How to Make a Low Carb Chocolate Quesadilla
Spread the cream cheese over one of the tortillas.
Slide the quesadilla into a small non-stick skillet and sprinkle the chocolate chips over the cream cheese.
Place the second tortilla over the chocolate, and dry-fry over a low-medium heat for about 2-3 minutes on each side, or until the tortillas have crisped up and the chocolate is starting to melt.
Transfer the quesadilla to a cutting board and cut into six wedges. Sprinkle with the confectioner's Swerve to serve, if you like.
The way that the melted chocolate mixes with the cream cheese is SO good!
You could also add other flavors to the cream cheese if you like – maybe a little orange or peppermint extract mixed in? Or even some chopped nuts for a textural contrast!
