Halloween is the perfect time to have fun with your food – although I often feel that our options are limited as low-carbers.
But following some great reactions from my Low Carb Halloween Chips that I posted the other day, here's how to make fun Halloween Quesadillas that everyone will enjoy!
How to Make Low Carb Halloween Quesadillas
Grab some low carb wraps, you'll need two per quesadilla. Here I'm using 4g net carb Wholewheat Soft Taco ones from Mission as my usual 3g ones were out of stock!
Get a sharp knife and cut out jack o'lantern eyes, nose and mouth into one of the tortillas.
Place the uncut tortilla on a baking sheet lined with a silicone mat. Place it under a preheated broiler and broil it on both sides until slightly crispy.
Add shredded cheese – I love chihuahua but a Mexican blend also works well. Place the cut tortilla next to it on the sheet and return to the broiler.
Broil until the cheese has melted, and the cut tortilla has crisped up on both sides (flip it half way through cooking).
Place the cut tortilla on top of the melted cheese, and serve!
