The noodles in this fun Halloween dish are Liviva Spaghetti made from edamame. They contain 5g net carbs per 2 oz serving and I liked that they were green!
But you could totally use any other low carb noodles or spaghetti that you like – here are some great suggestions for you:

How to Make Low Carb Halloween Spaghetti
The “eyeballs” can be prepared in advance, and as they're a little fiddly I recommend it! Dab a little cream cheese onto some mozzarella balls (I used ciliegine size). Cut a tiny piece of a cherry tomato (or red bell pepper) and stick it onto the cream cheese. Then place a slice of black olive over the top.
You could also make the “iris” different colors like green or orange by using other veggies! If making in advance, store covered in the fridge until required.
Once the eyeballs are made, the rest of the meal comes together very quickly! Bring a pan of water to the boil and add the spaghetti. Cook for 2-4 minutes until tender, the drain and return the spaghetti to the pan. Add some basil pesto and stir well.
Transfer the spaghetti to a serving plate, and add the eyeballs.

- 8 small mozzarella balls (eg ciliegine)
- 2 tsp cream cheese
- 1 cherry tomato
- 4 large black olives, sliced
- 4 oz Liviva edamame spaghetti
- ¼ cup basil pesto
Instructions
