This dessert is sort of a combination of my layered jello dessert, my berry cream dessert, and my cranberry jel dessert! The colors make it a wonderful dessert to serve at any time of year!
I've used strawberry flavor Simply Delish and frozen raspberries, but you could use the same berry type if you prefer. Simply Delish is sugar free, vegan friendly, certified keto, and doesn't contain aspartame. Oh – and no artificial flavorings or colors!

How to Make a Low Carb Layered Berry Dessert
In a deep sided bowl, beat some heavy cream into soft peaks and set aside.
In a separate bowl, whisk together the Simply Delish Strawberry Jel Dessert with some boiling water.
Add half of the jel mixture to the cream and beat until smooth.
To the remaining jel, add some frozen raspberries and cold water, then mix well.
Divide the cream mixture between four serving bowls, then spoon the raspberry jel on top.
Transfer to the fridge for 30 minutes then serve, garnished with fresh raspberries and mint leaves.

- 1 cup heavy cream
- 1 packet Simply Delish Strawberry Jel Dessert
- 1 cup boiling water
- 1 cup frozen unsweetened raspberries
- ¼ cup cold water
- fresh raspberries and mint leaves, to garnish

- Add half of the jel mixture to the cream and beat until smooth.
