I don't know about you, but I'm always looking for quick, easy, and delicious meals. As the weather gets warmer, I want to spend as little time in the kitchen as possible – and that's why these low carb Pesto Chicken Lettuce wraps are perfect!
The idea came to me when I was in Meijer recently, and saw these Tyson® Fully Cooked Grilled Chicken Breast Strips – and they looked so handy that I also bought the other two varieties: Tyson® Fully Cooked Oven Roasted Diced Chicken Breast and Tyson® Fully Cooked Fajita Chicken Breast Strips!
These Tyson Fully Cooked Chicken products have no added hormones or steroids, no artificial ingredients, and the chickens are raised with absolutely no antibiotics. Plus – they are only made with white meat chicken which meant my husband would like them too!

How to Make Low Carb Pesto Chicken Lettuce Wraps
Add the Tyson Fully Cooked Grilled Chicken Breast Strips to a bowl, together with some mayonnaise and pesto (I used some from a jar because this recipe is all about convenience – but of course you can make your own if you'd prefer).
Mix everything together, then add some chopped English cucumber and chopped grape (or cherry) tomatoes). At this point you could also add in some extra ingredients – how about some chopped celery, or ripe avocado? I think it's nice to have something crunchy in there like the cucumber or celery, but you could also add in some toasted nuts! If you have a winning combination of ingredients, please let me know in the comments!
Note: I've used the whole bag of Tyson Fully Cooked Chicken for this recipe, but if you want to halve the recipe, you'll love that the bags have an added zipper so that you can easily re-seal them!
Stir again, and check for seasoning. Add salt and pepper if necessary – but depending on which pesto you use you might not need any.
By the way – you can prepare up to this stage in advance! If you know that you're going to be in a rush later, then this will really help you out.
To serve, divide the mixture between eight lettuce leaves (butter lettuce or just regular green leaf lettuce are good choices).
Don't overfill them otherwise they will be impossible (and messy!) to eat!

Ingredients
- 12 oz Tyson® Fully Cooked Grilled Chicken Breast Strips
- ½ cup mayonnaise
- ¼ cup pesto
- 3 oz English cucumber, chopped
- 4 grape tomatoes, chopped
- salt and pepper, if necessary
- 8 large lettuce leaves
Instructions
- Add the Tyson® Fully Cooked Grilled Chicken Breast Strips, mayonnaise and pesto to a bowl.
- Mix everything together, then add the chopped cucumbers and tomatoes. Stir again, and check for seasoning. Add salt and pepper if necessary.
- To serve, divide the mixture between 8 lettuce leaves.
